The cold as the only preservative

The cold is one of the oldest methods of natural preservation.
Deep-frozen foods use the cold as the only preservative and are maintained for a long time because the water component contained within the food turns into ice, thus not allowing the activity of enzymes and bacteria that would result in deterioration in the quality and nutrition.
Under these conditions the food remains almost “blocked” and stable if after deep-freezing it is maintained at a constant temperature of less than or equal to -18 °C.

Surgenuin uses this principles in our products. The sudden lowering of the temperature accompanied by the respect of the cold chain, at a temperature of at least -18 ° C, allows only the cold to maintain the products without the use of any added preservatives.

All the recipes developed by Surgenuin and consequently also our products follow the Clean Label philosophy – that is, an understandable, clean and transparent ingredient statement that bans preservatives, colours and artificial flavors.
A few simple ingredients are used in connection with the traditional recipe so that our customers can imagine and know exactly what is being used for the manufacturing of the product.
